Making mayonnaise from scratch is a quick and easy process that can be completed in less than 5 minutes if done by hand. How to Make Mayonnaise

  • 2 tablespoons of lemon juice

  • 1 egg yolk (at room temperature)
  • Whisk
  • 2 bowls

Directions:

  1. In one bowl, combine the vinegar and lemon juice. Stir well to create a vinegar mix.

  2. In the other bowl, add the egg yolk, salt, dry mustard, and sugar. Stir until thoroughly mixed, ensuring a thick consistency.

  3. Pour half of the vinegar mix into the bowl with the egg yolk mixture. Stir to combine.

  4. Slowly drizzle the cooking oil into the mixture while whisking at a steady pace. Continue whisking until half of the oil is blended in. Avoid pouring the oil too quickly, as this can lead to a liquidy consistency.

  5. Once half of the oil is incorporated, add the remaining vinegar mix. Keep stirring at a constant pace while drizzling in the rest of the oil.

  6. After all the oil has been added, you should have a creamy and fluffy mayonnaise. This homemade mayonnaise can be stored in the refrigerator for up to a week.

If you prefer a garlic-flavored mayonnaise, you can use a homemade herbal vinegar instead of regular white vinegar. Here’s how to make it:

Herbal Vinegar:

  1. In a mason jar, add 6 cloves of garlic, 4 heaping tablespoons of dried basil, and 3 tablespoons of black peppercorns.

  2. Fill the jar with white vinegar and let it sit for a while. The herbal vinegar will develop its best flavor after about 2-4 weeks.
