Leftover Beef Recipes

Here are three recipes using fully-cooked roast beef, steak, or ground beef. The rest of the ingredients are simple and usually kept on hand.

Scalloped Beef

Ingredients:

  • 2 cups of chopped roast (steak, or ground beef, fully-cooked)
  • 2 cups canned tomatoes (drained)
  • Salt and pepper
  • 1 cup beef or au jus gravy (or gravy leftover from pot roast)
  • May use more than 1 cup if needed.
  • 1 cup dried bread crumbs or croutons
  • 2 tablespoons butter

Directions:

Preheat oven to 350 degrees.

In a baking dish, arrange a layer of meat and tomatoes.

Season that layer with salt and pepper, and cover with a thin layer of gravy.

Continue layering the meat, tomatoes, salt, pepper, and gravy till used up.

Cover the top with the bread crumbs or croutons. Dot bits of butter over the crumbs.

Bake at 350 degrees for 30 minutes, or until hot through.

Baked Hash

Ingredients:

  • 2 cups of chopped roast (steak, or ground beef, fully-cooked)
  • 1 tablespoon butter
  • 2 cups cold (cooked potatoes)
  • 2 cups beef broth
  • Seasoning to taste

Directions:

Preheat oven to 350 degrees and grease a baking dish.

In a large sauce pan, melt the butter in the beef broth.

Add the chopped meat and potatoes, and mix together with the broth.

Season with salt and pepper to taste.

Pour into the greased baking dish.

Bake for 30 minutes at 350 degrees, or until hot through and nicely browned.

Creamed Hash over Toast

Ingredients:

  • 2 cups chopped roast (steak, or ground beef, fully-cooked)
  • Salt and pepper
  • 1 tablespoon chopped parsley
  • 1 teaspoon dried onion flakes
  • 1 cup cream sauce (recipe below)

Directions:

Combine the meat, seasonings, and cream sauce in a large sauce pan.

Cook over a low to medium heat until heated through.

Serve over slices of toast for an easy evening supper.

Cream Sauce Recipe

Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • Dash of black pepper

Directions:

In a skillet, melt the butter, taking care not to let it brown.

Add the flour, stirring until it is smooth.

Add milk gradually, stirring constantly until it boils.

Season and use at once with the Creamed Hash Recipe.
