Don't Mock Me! Mock Apple Pie Recipe

The mock apple pie was first introduced around the 1850’s. As the North American settlers traveled across the USA and out west, they craved a little piece of home, an apple pie. Since its not exactly an easy task to find apples out in the wilderness, the women had to come up with something to fulfill their food desires. What they came up with is very surprisingly almost the same. Not bad, considering the mock apple pie recipe doesn’t contain apples or apple juice. Now that’s some clever folk.

The original recipe called for soda crackers. Ritz, the cracker giant, saw this as a big marketing opportunity during the Great Depression in the early 1930’s. Apples were unbelievably expensive at that time, so Ritz changed the recipe to use its own brand of butter cracker and put the recipe on the back of the cracker box. Mock apple pie was a household favorite during the 1940’s and 1950’s.

So what makes the pie taste like an apple pie? It is believed to be the cream of tartar. It is very tarty and mixed with the sugar, water syrup it contains an apple taste. The cream of tartar contains tartaric acid as well as malic acid which is what gives apple that distinct tart taste.

Mock Apple Pie recipe

Ingredients

  • 2 cups water
  • 1 cup white sugar
  • 2 teaspoons cream of tartar
  • 30 buttery round crackers
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 recipe pastry for a 9 inch single crust pie
  • 1 cup crushed buttery round crackers
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup butter, melted

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a saucepan over medium high heat, combine the water, sugar and cream of tartar; bring to boil.
  3. Drop in whole crackers and boil for 5 minutes. Pour mixture into pie shell; sprinkle with cinnamon and lemon juice.
  4. Mix together the crushed crackers, brown sugar, cinnamon and butter; sprinkle over pie filling.
  5. Bake for 15 minutes and reduce heat to 375 degrees F (190 degrees C) and continue to bake for 15 to 20 minutes longer. Serve warm.
