Pecan Butter Tarts

Be prepared for this wickedly delicious treat.

Pecan Butter Tarts

Makes 30 small tarts

    • 1 cup brown sugar (level, packed down)
    • 1.2 cup melted butter
    • 1 large egg
    • 1 teaspoon vanilla
    • 4-5 pecans per tart (or crushed pecan pieces works great.. 100 g package or about 3 ounces)
    • 2 tablespoons evaporated milk (can use cream or regular milk)
    • 30 small pie crusts (you can purchase pre-made ones)

Directions:

Place pie shells on a cookie sheet and cook according to directions, usually about 375 º F.  for 10-12 minutes. Take out of oven and cool.

Filling:

Mix together brown sugar, milk and vanilla.  Break the egg into the mix and stir well, then add the melted butter.  Mix thoroughly.  Place the pecans at the bottom of each pre-cooked pie shells then add filling to 2/3 of the tarts. If you are using pecan pieces, sprinkle a little extra on top. Bake for 10 minutes. Cool.

You can also make a variety by crushing a handful of pecans with slivered almonds or just use raisins alone.  Fill the tarts with the filling mix and sprinkle the nuts on each one. Bake according to the directions above. If you use raisins instead of the nuts, add them to the bottom of the tart shell then add the filling.

These treats freeze well.
