Cranberry Surprise


  • 2 cups fresh cranberries
  • 1/2 cup sugar
  • 1/2 cup walnuts or pecans
  • 2 eggs
  • 1/2 cup butter or margarine melted
  • 1 cup sugar
  • 1/4 cup shortening melted
  • 1 cup flour


  1. Grease well a baking pan 8" x 6" x2". Spread cranberries over bottom of pan and sprinkle with the 1/2 cup of sugar and the nuts. Beat eggs well. Add the 1 cup of sugar gradually, beating until well mixed. Add the butter, shortening, and flour to the mixture. Beat thoroughly. Pour batter over top of cranberries. Bake in a slow (325 degree) oven for 1 hour or until crust is golden brown. Serve warm or cold with ice cream (vanilla) or whipped cream, if desired.
