- 1/2 cup boiling water
- 1/2 cup all-purpose flour
- 2 eggs
Filling Ingredients:
- 1 cup milk
- 4 tbsp all-purpose flour
- 6 tbsp sugar
- 1 egg
- Few grains of salt
- 1/4 tsp vanilla or other flavoring of your choice
Instructions for the Puffs:
- Combine the shortening and boiling water in a saucepan. Continue to boil until the shortening completely melts.
- Add the flour and beat vigorously until the mixture is smooth, thick, and pulls away cleanly from the sides of the pan.
- Add the eggs, one at a time, beating well after each addition. The mixture should become a thick, heavy dough.
- Arrange small rounds of dough (about 1-2 inches in diameter), at least 3 inches apart, on an oiled cookie sheet or shallow baking pan.
- Bake in a moderate oven (350°F / 175°C) for 40 minutes, or until the cream puffs are beautifully puffed up and golden brown all over.
- Once baked and cooled slightly, cut them just enough to fill with the cream filling.
Instructions for the Filling:
- In a separate saucepan, combine the milk and sugar.
- Add the flour and whisk until the mixture is smooth.
- Stir in the salt, then add the egg.
- Cook the mixture over low heat, stirring constantly, until it thickens.

- 2 cups sweet milk*

- Add the sweet milk, melted butter or lard, and eggs to the well.
- Mix until the dough becomes stiff, adding more flour if necessary to reach the desired consistency.
- Roll the dough out onto a well-floured surface.
- Use a doughnut cutter to cut out your old fashioned doughnuts.
- Carefully drop the cut doughnuts into hot oil (ensure there’s enough oil for them to float).
- Fry until golden brown on both sides.
- Remove and drain well on a wire rack or paper towels.
