Cinnamon Pickles

Many of us like to eat pickles. We eat them with our lunch, our dinner, and even sometimes just as a snack. The most common kind being dill or bread and butter. One type that you many not have heard about are cinnamon pickles. They are not something that I have ever known of being available to purchase in a store, but here is how you can make your own fairly easily.


  • 2 gallon of cucumber chips( large yellow, peeled, seeded, and sliced)
  • 8 1/2 quarts of water
  • 2 cups of lime
  • 4 cups of vinegar (divided)
  • 1 (1 ounce) bottle of red food color
  • 15 cups of sugar
  • 1 24 ounce package of red hot cinnamon candy
  • 8 cinnamon sticks


First, place cucumbers in a large bowel. Combine lime and water together and pour over the cucumbers. Let stand for at least 24 hours. Drain and then wash cucumbers three or four times. Return them to your bowel, cover with ice water and let them set for about 4 hours. Drain again and then put cucumbers in a large pot or kettle. Now add 1 cup of vinegar, food coloring, and enough water to cover your cucumbers well. Bring water to a boil and then reduce heat to a simmer and cook for about 3 hours. Drain once again and put them back into your bowel. Now combine remaining 3 cups of vinegar, sugar, red hots in your pot or kettle; heat to boiling. Pour hot liquid over cucumbers in bowel: let stand for at least 24 hours. Drain cucumbers, reserving syrup that is now on them. Take syrup and heat it to boiling and pour it back over the cucumbers, let it stand once again for about another 24 hours. Repeat this procedure for two more days. On the fourth day of soaking cucumbers in red syrup, drain and heat syrup to a boil. Meanwhile pack cucumber chips into hot sterilized jars. Pour boiling liquid over cucumbers. Seal. Put them in a hot water bath for about 10-15 minutes.
