Old Fashioned Corn Relish Recipe
How to make traditional style corn relish. Use to top all your favorite burgers, sausages or hotdogs.
Makes 5 pints (10 cups)
You will need:
- 18 ears of sweet corn
- 1 cup of diced celery
- 4 cups of white vinegar
- 2 cups of brown sugar
- 1 small cabbage, chopped in small pieces
- 4 medium onions
- 2 red peppers, diced small
- 2 green peppers. diced small
- 2 tablespoons salt
- 3 tablespoons yellow mustard
Slice corn off of the cobs. Chop up the red and green peppers, onions and the cabbage. Add all ingredients to a pot and cook for 25 minutes, stirring occasionally until corn is tender. Once cooked, fill hot sterilized pint jars and seal. Makes 5 pints (10 cups).
