Strawberry Ice Cream
- 1 cup heavy cream (30-40% fat)
- 2 beaten egg yolks
- 1 teaspoon vanilla extract
- 1 cup sugar
- 2 tablespoons of water
- 2 cups of milk
- 2 tablespoons of flour
- 2 cups of crushed strawberries
Make a custard by scalding the milk, then mix together the flour and water to make a paste, then add to the scalded milk stirring continually. Once thickened cook in a double boiler for 15 minutes, add the sugar and egg yolks then cook for another 2 minutes. Strain the custard through a sieve then put into the fridge until its cold. Once cold, add the vanilla and cream then partially freeze before adding the strawberries, then freeze completely.
