Country Minestrone Soup
This hearty flavorful soup is not only flavorful but it scents the air with its mix of hearty vegetables and aromatic garlic and onions. Its a feast for all your senses.
Country Minestrone Soup
Serving Size: Makes 6 servings.
Preparation Time: Approximately 30 minutes.
Ingredients:
- 2 large carrots (diced)
- 2 cups of cabbage (shredded)
- 1 large potato (diced)
- 1 large onion (chopped)
- 1/2 cup of pasta (your choice)
- 2 1/2 cups cooked red kidney beans or large can of beans (28oz)
- 3 1/2 cups tomatoes (diced)
- 1 clove garlic (minced)
- 2 tablespoons dried parsley
- 1/2 teaspoon dried thyme
- 1 teaspoon basil
- 1 tablespoon olive oil
- 6 cups of chicken broth
- pepper (to taste)
- salt (to taste)
- 1/2 cup shredded cheddar cheese (optional)
Directions:
In a large pot add olive oil, garlic, onions, carrots and spices. Cook until carrots are softened, about 5 minutes. Add the broth along with the tomatoes, bring to a boil. Reduce heat then simmer for 15 minutes. Add the cabbage, beans and pasta. Bring to a boil then simmer until pasta is cooked, about 5 minutes. Season with salt and pepper.
Spoon into bowls, garnish with cheese if desired.
