How to make old fashioned potato pancakes. Serve with applesauce and breakfast sausages to complete this hearty breakfast.

Old Fashioned Potato Pancake Recipe

Makes 12 small  or 6 large pancakes


  • 3 cups of grated potato
  • 2 eggs (beaten)
  • 1  1/2 tablespoons of flour
  • 1/8 teaspoon baking soda
  • 1 teaspoon salt
  • 1 medium onion chopped
  • pepper


Add beaten eggs to the shredded potatoes,  then add the rest of the ingredients except pepper.  Heat a well greased skillet, brown the pancakes on both sides, press down with spatula, sprinkle with pepper.  Alternative: Add 2 minced garlic cloves and 1/2 cup shredded mozeralla cheese instead of the onions. Serve with fried bologna, bacon or sausage and toast.
